GNU stands for GNU (is) not UNIX. It is part of the FSF (Free Software Foundation) which was created by Richard Stallman. GNU provided many tools that people can use for free on UNIX clone computers. Of the better known programs are gcc, gdb, objdump, gas, gtar, gzip.
